There are secular type of dehumidifiers. Usually they are called desiccators. Silica Gel, Calcium Carbonate are a couple.

Drier air feels cooler than steamy air. Also I think that it can cut down on mold and mildew caused by too much moisture. I don't know if it actually saves energy though. . . maybe it does. I exactly use one for the above reasons.

A dehumidifier will labour if your garage is sealed. I'm not sure how well it will keep up if you have an overhead door. There are a lot of air leaks in an overhead door.
